This Danish dessert is a classic that is found all over Denmark and goes back to WW2, when Denmark was known for it's whipped cream desserts. 

The general makeup of this dessert is two shortbread cookies that sandwich a ring of whipped cream, filled with homemade raspberry jam and a light Danish vanilla custard; it is then topped with a chocolate flavored glaze, a dollop of whipped cream and a fresh raspberry. 

Medallions may look like an ice cream sandwhich but they have a much more complex and delightfully fresh flavor. A very important thing to note is that they should not be eaten like an ice cream sandwhich or the filling will squish out! 

Can be ordered with a white glaze, with strawberry or blueberry jam instead of raspberry, and/or with a Gluten-free crust instead.
